Quick, easy, delicious, nutritious and full of flavour! What more could you want from an all natural, refined sugar free, vegan and dairy free muesli recipe! Well boy, do I have a treat for you.
This recipes has been my absolute go-to for the past year. I make it at least once a month and enjoy it with almond milk, on top of my smoothie bowls or just as an afternoon snack!
I cannot count the amount of times that I have ordered muesli in a cafe and been bitterly disappointed. Spending $16 on a bowl of processed, refined sugar based cereal really makes my skin crawl. Not does this recipe make a really big quantity that will last you a few weeks, but you know exactly what you are putting into your body while you enjoy its goodness. Bonus!
Dairy Free - Refined Sugar Free - Vegan
2 cup whole grain oats
3/4 cup pumpkin seeds
1/4 cup coconut sugar
1/2 cup linseed
3/4 cup pecans (chopped)
1/2 cup almonds (chopped)
1 cup sultanas
2 tsp vanilla
1 tsp salt
1/2 cup rice syrup
1/2 cup coconut oil
1/2 tsp nutmeg
2 tsp cinnamon
1/2 tsp cloves
3 cup Coconut Chips
Preheat your oven to 160 degree's.
Spread granola mix out on baking paper on an oven tray.
Bake at 160 degrees for 40 minutes - Mixing every ten or so minutes.
Add 3 cups of coconut chips in the last five minutes of baking to toast.
Remove from oven and set aside to cool.
I store mine in glass jars and love to gift it to a few of my favourite people.
