Rad Mama Apple Crisp

We’re sharing with you, the ultimate comfort dessert: an irresistible Apple Crisp recipe that will leave you wanting seconds (or thirds, no judgment here!). Picture this: sweet and tender apples, bubbling beneath a golden, crunchy Rad Mama topping, filling your home with the most inviting aroma. This Apple Crisp is about to become your go-to dessert (as it is in our house!) for those cold winter nights when all you need is a little slice of heaven on a spoon!

 

You will need:

 

Filling

8 medium apples

2 tbsp lemon juice

2/3 cup brown sugar (or coconut sugar)

1 ½ tsp ground cinnamon

3 tbsp cornflour

¼ cup water

 

Topping

1 cup Rad Mama

½ cup almond meal

½ cup flour of your choice

½ cup brown sugar (or coconut sugar)

½ cup nuts of your choice, roughly chopped

¼ tsp salt

1 tsp ground cinnamon

½ cup coconut oil, melted

 

To make:

 

  1. Preheat the oven to 180 degrees.
  2. Peel and finely slice apples.
  3. Add to a large mixing bowl with remaining filling ingredients. Stir to combine. Add to a 23cm x 30cm (or similar size) baking dish.
  4. Combine all topping ingredients in a mixing bowl. Stir to combine, ensuring you break down any clumps of sugar. Pour over the apples in an even layer.
  5. Bake for 50 minutes to 1 hour (uncovered) until the filling is bubbly and the topping is a deep golden brown.
  6. Serve with your choice of ice cream and enjoy!
