INGREDIENTS:
BASE LAYER:
1x Choc Mint Rad Ball Mix
1/4 cup melted coconut oil
1/4 cup date paste
1/4 almond flour
PEPPERMINT LAYER
2 cups (300g) raw cashews soaked for 1 hour in warm water
1/2 cup coconut cream
1/2 cup maple syrup or sweetener of choice
1/4 cup melted coconut oil
2 tsp peppermint oil
2 tsp Rad Greens
CHOCOLATE LAYER
1/4 cup coconut oil
1/4 cup cacao powder
3 tbsp pure maple syrup
TO MAKE:
1. Combine all base ingredients in a bowl and press into a lined 20x20cm baking tray.
2. Blend peppermint layer ingredients until smooth, and spread evenly over the base. Refrigerate for 30-60 minutes.
3. To make the chocolate layer, blend all ingredients until smooth and pour over the peppermint layer. Refrigerate until set and slice into bars.
